20 kumquats
4/5 cup granulated sugar
1 teaspoon (3g) TREHA®
3 tablespoon (1fl oz.) lemon juice
Rinse the kumquat clean with running water.
Cut four vertical slits on each kumquat surface.
In a pot, place kumquat and enough water (not included in the list) to cover and bring it to a boil.
Turn off the heat when the film is formed, strain with a colander, and wash the fruits with running water.
Return the kumquat to the pot. Add water just enough to cover, granulated sugar, and TREHA® and bring it to a boil.
Turn off the heat when the fruit becomes soft. Add lemon juice and let it cool.
