- Sushi Rice -

Ingredients A

  • 150 g uncooked rice

  • 85 g spelt grain

  • 300 ml water

  • 10 g TREHA®

Ingredients B

  • 30 ml apple cider vinegar

  • 8 g sugar

  • 3 g TREHA®

  • 4 g salt

  • 60 g potatoes, boiled and cut into 5mm (0.2-inch) cubes

  • 8 anchovies, finely chopped

  • 15 g olive oil

  • 4 green and black olives each, coarsely chopped

  • 40 g chunk tuna

  • 8 pieces deep-fried tofu pouches

Instructions
  1. Cook rice with ingredients A, then combine with mixture B.

  2. Combine the potatoes, anchovies, and olive oil together.

  3. Combine 1., 2., olives, and tuna together.

  4. Grill tofu pouches until well browned and crisp. Cut them diagonally in half.

  5. Stuff 3. into 4.
