Ingredients A
150 g uncooked rice
85 g spelt grain
300 ml water
10 g TREHA®
Ingredients B
30 ml apple cider vinegar
8 g sugar
3 g TREHA®
4 g salt

60 g potatoes, boiled and cut into 5mm (0.2-inch) cubes
8 anchovies, finely chopped
15 g olive oil
4 green and black olives each, coarsely chopped
40 g chunk tuna
8 pieces deep-fried tofu pouches
Cook rice with ingredients A, then combine with mixture B.
Combine the potatoes, anchovies, and olive oil together.
Combine 1., 2., olives, and tuna together.
Grill tofu pouches until well browned and crisp. Cut them diagonally in half.
Stuff 3. into 4.
Gives cooked rice a good luster.
Keeps sushi rice soft and moist over time.
