Boiled Chicken
Ingredients
  • 260 g chicken breast (1 piece)

  • 1 L water

  • 20 g TREHA®

Instructions
  1. Heat water and TREHA®︎ in a pot. When the water boiled, turn off the heat.

  2. Place chicken breast in the boiled water, then cover with a lid. Leave it for 15 minutes to cook medium-well. Make sure not to overcook chicken.

  3. Remove the chicken breast from the pot and leave it to cool. The broth can be served as chicken soup. The chicken can be stored for 2 days in a refrigerator in the broth.

Jade sauce with scallion and Sichuan pepper
Ingredients

Mixture A

  • 50 g scallion (or green onion)

  • 60 g sesame oil*

  • 2 g TREHA®

  • 4 g vinegar

  • 1 g soy sauce

Mixture B

  • 5 g chicken broth (from ‘Boiled chicken’ above)

  • Sichuan pepper as needed

  • salt as needed

*TAKEMOTO OIL & FAT Co., Ltd. / TAIHAKU sesame oil(If unavailable, use unscented vegetable oil instead)

Instructions
  1. Mix A by a blender until smooth. This is the base mixture of the sauce.

  2. Mix 20 g of base mixture from 1 and B just before serving.

Apple Slices
Ingredients
  • 1/4 apple

  • water as needed

  • TREHA®︎ 10% weight of water

Instructions
  1. Remove the core and thinly slice an apple.

  2. Dissolve TREHA®︎ into water to make 10% solution. Soak sliced apple in the solution for 30 minutes.

For Food Presentation
Ingredients
  • radish as needed

  • 3% TREHA®︎ solution as needed

  • endive as needed

  • edible chrysanthemum as needed

Instructions
  1. Cut the radish into very thin slices. Soak the slices into 3% TREHA®︎ solution for 10 minutes.

  2. Slice boiled chicken and assemble with sliced apples. Garnish with endive, radish from 1 and edible chrysanthemum.
