Hayashibara Co., Ltd. (“Hayashibara”), the manufacturer of TREHA®, has been the first Japanese “premium supplier” of Relais Desserts since April, 2019.

Relais Desserts is the France-based association for distinguished patisseries and chocolatiers around the world. Approximately 90 chefs from 19 countries belong to the association. Members are renowned for their high level of expertise; new members need to be nominated by other chef members and pass technical tests to join this exclusive group of chefs.

‘Relais’ means relay in French, desiring to relay expert craftsmanship to younger generations. The association holds meetings in spring and autumn. Five* Japanese chefs, who are well known among sweets-lovers in Japan, participate in the association.

After the autumn seminar held in Yssingeaux, France in 2018, Relais Desserts offered Hayashibara to be a premium supplier of the organization. In the seminar, Hayashibara introduced TREHA® to the chefs. A newly made French brochure was prepared for the seminar, which introduced how to use TREHA® for pastry and confectionery. TREHA® was showcased to the chefs in crispy candied fruit slices, highlighting how TREHA® was superior in maintaining the flavor and crispiness of candied fruit slices, without being overpoweringly sweet, like table sugar. TREHA® was new to most of chefs and they were excited to see the varying applications TREHA® could have in their pastry and confectionary. The chefs were most excited about TREHA®’s ability to save them time, because of its ability to increase freeze-thaw stability of desserts and stabilize product in heat and acidity.

Commercial products and tasting samples with TREHA®︎ were offered to participants. Chefs who were interested in TREHA® in the autumn seminar in 2018 visited Hayashibara’s display booth. They were keen on learning more about TREHA®’s applications for use.
